PSA: Eating healthy does NOT mean giving up your favorite foods

It's breakfast time again! This time I wanted to share with you guys my all time favorite breakfast food with a healthy spin to it: EGGS BENNY. I also wanted to make sure you guys know that eating healthy does not mean giving up your favorite foods. Even if its not Eggs Benedict, you can find or create a healthier version of your favorite meals and I encourage it. Eating healthy does not mean eating bland foods! Looks yummy, huh? Well, let's get started.

Ingredients:
- 2 eggs
- 1 slice of lean ham
- 1 whole wheat english muffin
- 1/4 cup lemon greek yogurt
-1/2 teaspoon dry mustard
- 1 pinch of salt
- 1 pinch cayenne pepper
- 1 tablespoon white vinegar
In a small sauce pan on low heat, add the lemon low fat yogurt, dry mustard, salt and cayenne pepper and stir.
Fill a larger pan with 2 to 3 inches of water, add the white vinegar, and bring to a light boil. Gently crack the eggs, one by one, into the boiling water and white vinegar mixer. Let the eggs simmer for 3 to 5 minutes depending how cooked you prefer the yolks to be. While waiting, I recommend spooning boiling water over the eggs to aid in the even cooking of the eggs.
Meanwhile, toast the whole wheat english muffin to your desired 'toastiness'. Cut the lean ham in two pieces and place in a small sauce pan on medium heat.
On a plate place, two halves of the lean ham on the halves of the english muffin. Carefully remove the eggs from the boiling water mixer with a perforated spoon to allow the excess water to drip. Place one egg on top of each english muffin and ham combo. Remove the sauce mixer from the stove and drizzle on top of the eggs.
Final step: EAT & ENJOY
Nutritional Break down:
