Hi guys! I have a quick, easy AND delicious recipe for you guys today! Cod (breaded but NOT fried), asparagus, and quinoa "salad".
Is your mouth watering yet? If it isn't, then it will be soon.
The main focus of tonight's dinner is FISH. According to the American Heart Association, you should be having two serving of fish a week for a healthy heart. Fish is packed with heart-healthy nutrients and omega-3 fatty acids. Choosing to bake your fish instead of frying it is also good for your heart!
Let's get started.
Ingredients:
'Fish'
3 oz cod
1/3 cup panko breadcrumbs
1 pinch salt
1 pinch pepper
2 tablespoons whole wheat flour
1 large egg (beaten)
'Quinoa Salad'
1/2 cup Quinoa
1/4 cup of sliced black olives
1/4 cup Garbanzo Beans (Chickpeas)
1/4 cup black beans
6-10 asparagus spears (depending on the size)
Let's get cookin'
Combine the panko breadcrumbs and the pinches of salt and pepper in a small shallow dish and set aside. In another shallow dish, slightly beat the large egg and set aside. In a third shallow dish, pour 2 tablespoons of whole wheat flour.
Now, let's get out hands messy... (I'm not the only messy one here, right?)
Place the cod into the breadcrumb, salt, and pepper mixture and coat. Shake off the excess and the place the cod into the egg and flip to evenly distribute the egg. Let the excess egg drip off and then place into the breadcrumb mixture once again. Make sure its as coated as you prefer (more crunch or less crunch?).
Heat a sauce pan to medium heat and spray it with cooking spray. Let the cod cook for about 10-13 minutes and until the bread crumbs get a golden brown.
In a small but deep pan boil 1 cup of water and add the quinoa. Cover the pan and let cook on medium heat for 15 minutes.
To mix the quinoa salad, add olives, garbanzo beans, black beans and quinoa into a small bowl.
In a sauce pan, place the 6-10 spears of asparagus and drizzle olive oil on top. If you want, add a pinch of salt. Cover the pan and let cook for 10 minutes.
Now this is the fun part. Make your tasty plate and ENJOY!
