Most Important Meal of the Day

It's 8:00 am Monday morning and I'm already having a case of with-drawl from the weekend. The only thing getting me out of bed this morning is breakfast, the most important meal of the day and the most delicious.

I am such a breakfast person! Eggs, bacon, pancakes, french toast, oatmeal; love, love, love, really love. Now breakfast (calories) can go from zero to a hundred real fast when I'm adding on my favorite breakfast foods. While I still like to enjoy my occasional pancakes and bacon, I like to stick to simple, light and tasty recipes for the majority of my mornings.
This is my GO-TO scrambled egg recipe for the morning. First off, why eggs? Eggs are a great source of protein, vitamins and minerals. For me, I prefer using egg whites to cut down on my cholesterol intake but egg yolks are a good source of healthy fat so don't be shy if you like egg yolks.
In my eggs I always throw in some veggies. I stick to tomatoes, onions, and mushrooms for inside my eggs. They are so tasty and very good to start off your day with vitamins.
On top of my eggs, I slice up half an avocado for some healthy, natural fats. Then on the side, a few strawberries because WHY NOT. Natural sugar found in fruits won't hurt ya!
